The craft

Wood fire, nothing else

Wood firing is not decoration: it is what gives the pizza its character. The oven soars in temperature, the stone hearth sears the dough in minutes and the flame paints the crust with those golden blisters no electric oven can match.

We work a long-matured dough, supple and light, topped with seasonal Mediterranean produce. The result: an airy edge, a melting centre and that smoky taste that marks a true wood-fired pizza.
